It’s half a red onion, one green bell pepper, black beans, and tomatoes. I added ginger paste, cumin, cayenne pepper, salt, and a little turmeric. Might add some cilantro next time.

Thanks! I just started eating healthy again, and I wouldn’t really call myself a vegan, but a lot of the recipes I like can easily be made vegan. This one is so easy to make.

That’s a good idea. I’m nearing the bottom of a big bag of jasmine rice right now. When it’s time to replace it, I’ll probably get long-grain brown rice.
I swapped to brown rice from white, found that I wasn’t getting sleepy 2 hours later anymore.
