Yum! Is the cinnamon mixed throughout the dough or rolled into the center of each “string” in the braid?

I paint two layers on the bread just prior to sticking in the oven. The coat goes over the egg+honey wash. The coat is just vodka and cinnamon mixed together until I get the shade that I want. I think this technique is called spice painting but not sure.

Cool! I imagine it makes the house smell even more delicious as the cinnamon toasts. Also honey in the egg wash sounds delicious.

Thanks. Yeah the house really does get that toasted cinnamon smell. Honey in egg wash I am fairly certain I found on King Arthur’s.

I am sorta toying with the idea of baking with toasted flour and using it to make a cinnamon raisin braided bread.

Oooh that sounds interesting! I’m making my grandma’s cinnamon raisin braided bread later this week. She always made it for Easter, so now I do too.

I tried it a few times before just more work so haven’t done it a lot.

Take the flour and put it in a skillet mixing constantly on low heat for about 5 minutes. The flour smells like toast and the bread smells like it when it’s done. You have to bring the water levels up. Haven’t tried it with braided bread yet so not sure.

Just curious. You seem to have a strong preference for braided bread - any particular reason? Any advantages?

Not sure. It’s a bit of a challenge to braid, makes the texture a bit different, looks nice, means I don’t have to score, also I only own one loaf pan and enjoy making two at a time.

Just wandering around this craft aimlessly to be honest. Maybe in a month or so I will look at other ways. Got any ideas?
