NHL season starts today! I made a baseball cake for Opening Day, i made an OSU football cake for college football, so now i have a hockey rink for the start of the NHL! This time it is a regular yellow cake on top of a layer if vanilla ice cream and crumbled oreos, all standing a top a bed of whole oreos! To really give this an icy finish, i put peppermint extract in the icing for a cool, minty, finish!

Ice cream cakes are a pain in the ass to decorate! It was a constant race against time to ice it before the oreo/ice cream layer melted and it had to go back in the freezer numerous times, which made the icing freeze up. Decided i was done with it, but I’m happy to have finished it!
