Have you tried Outward? It’s not the world’s prettiest game, and it is a bit clunky, but I loved it.
It definitely sits somewhere in the Morrowind-Soulslike-Zelda-ish genre you’re after.

I’ve put it down and picked it back up 2 or 3 times; looking forward to starting Necrom tomorrow, but once that’s done I’ll it it down again I think.
I think it’s generally an amazing game, but I don’t do much of the multiplayer content, so each time I’m away for 1.5 to 2 years to let content build up and get myself out of the grind.
Leaving the sewers… and almost immediately getting murdered by a khajiit with a giant hammer.
Same for me; I’d never even heard of Morrowind or played anything like it before. It was my first x360 game and it really made me believe the ‘next gen’ hype.

It was like magic when I first used one; a real ‘the future is now’ moment.
They have 100% turned FO76 around; it is night and day to the state it was in at release.
It is of course still multiplayer/online, so has the ‘grindy’ elements associated with that, but even played as a single player game it is a great addition to the series. Better than Starfield at present IMO.
