    So instead of wild agave, we could be growing agave, but the big distilleries don’t want to

      We do though, there’s massive agave plantations. This is just about one variety that is likely more difficult to grow like that or it’s yield is low

        The variety in question takes 25 years to mature and so far has been resistant to cultivation.
