I would also like to add that anyone who dismisses all American cheese outright due to trash like Kraft Singles and Velveeta are missing out on some of the best sandwich cheese you can get.
Yeah American cheese is typically real cheese, extra milk, and an emulsifier to keep the milk and cheese cohesive. Cheaper stuff can play it a bit more fast and loose but even singles the first ingredient is cheddar
