You start with a basic recipe, then hone to your liking after doing it for months, then start to get into fancy additions and such. But having fresh bakery-quality bread is totally worth the effort.
Sourdough takes like two weeks to get a starter going, then you have to keep feeding it to keep it alive (like once a week in the fridge). But then you can use that to make good, bakery-quality bread for years. Its a deep rabbit-hole but very worth it in terms of how cheap it is in the long-run, and quality.
